Anthony Bourdain: No Reservations in New Zealand

Here are five clips of Anthony Bourdain in New Zealand. Together, they comprise one No Reservations episode from Season 1. Caution: The scene of hunting the wild boar, killing it, and preparing it for dinner is rough. I had a hard time watching it. However, if you want a glimpse of New Zealand and Kiwi life, this is a good approximation. Yes. The scenery is THAT fantastic and varied. Total viewing time of all five videos is around one hour. Top Chef Judges: or My Puppy Love for Anthony Bourdain Continues

Ok, so there were no surprises in my favorite Top Chef guest judge poll: Anthony Bourdain received twice as many votes as second place finisher Alfred Portale. Did anyone catch Anthony on Monday night's No Reservations? His awesome trip to China reminded me of my own recent journey there. Yes, delicious affordable street food is abundant everywhere you go in Shanghai, and yes the Chinese are casually cruel to their food animals. To them it's about freshness not animal rights, and everywhere I looked in food stalls or the meat sections of grocery stores I had to turn away from the sight of fish in obvious distress in their overcrowded tanks, and of live cooped up turtles and eels and ducks and chickens. I ate very little meat while I was there.
As always I am amazed at Anthony's ability to pop anything in his mouth and say yum. If someone said, "Here try these nice weasel testicles made with a bat's lung sauce", I have no doubt our intrepid Anthony would give the dish a fair critique.

Our Anthony has been a busy man, writing for Ruhlman's blog and for Tom Colicchio on at least two occasions. Tonight Top Chef 3 will feature as guest host Rocco Di Spirito. After watching The Restaurant, this is how I feel about Rocco: the man is super aware of his star status, much to the detriment of Rocco's, the restaurant in the show. I felt Jeffrey Chodorow was right to go after Rocco for squandering Jeffrey's money. Rocco also missed a great opportunity of consolidating his image as a serious, talented chef. All I saw was a prima dona behaving like a spoiled child. He would abandon his leadership duties to talk to the pretty girls, sign autographs, and have his picture taken. Ick. How high school. Meanwhile, paying guests had to wait forever for their pricey entrees, much like the Hell's Kitchen diners.

Here's a link to a recipe for Rocco's momma's meatballs, the raison d'etre for the opening of that restaurant in the first place. Momma, who's as old as the hills, worked harder than Rocco.

Anthony Bourdain, understanding the preconceptions some of us will have about Rocco, forestalled our snarking by writing these insightful words:

It’s easy to be dismissive of Rocco’s limelight-loving ways, or to have been appalled (as I was) by the horrifying circus of bathos that was his reality series. And he DOES have that curious Nicole Kidman “shock and awe” expression on his face these days; but Rocco--when he wanted to-- could COOK. Brilliantly. Even his detractors (like me) know that. He’s a truly gifted cook with a great palate. In a head-to-head competition with Hung? (Similar cooking styles.) He could cook him under the table with one hand tied--on roller skates. If HE tells you your Arroz Con Pollo sucks? It’s time to take a long look into that cold, cruel merciless mirror.

I adore Anthony and his facile way with words, and am in a fair way to becoming a Bourdain groupie. Next thing I know I shall have to abandon my Jane Austen books and purchase all of Anthony's tomes. I wonder, are Anthony sheet sets available? Bourdain travel calendars, kitchen utensils, or dried soup packets? Does he promote sexy lingerie with his signature on it? Anthony whore that I've become, I'd bite and buy.

Hell's Kitchen: And the final two competing for the top prize are....

Rock and Bonnie.

Bonnie?

Sorry. All credibility for this show has flown out the window. Rock, the executive chef, had better win over Bonnie, the private chef, strike that, cook and nanny. (No, I was not for Jen. I was rooting for Julia, who is head above water ten thousand times more competent than Bonnie.)

Thank God I am able to wash down my disgust with a new episode of No Reservations with Anthony Bourdain. Right now he's in China. Ah, I feel cleansed. Except for the part of watching live fish being fried in hot oil. (The Chinese can be so casually cruel to their food. This is not the first time I have watched an example of a live fish being tortured to death for the sake of the Chinese concept of freshness.)

Anthony Bourdain Vindicates Ms. Place

Darling Anthony, he of the well placed barb, he who minces no words even as he minces our cheftestants, strikes again in two well placed blogs, one as a guest judge for Tom Colichio for last week's episode, and the other in Ruhlman's blog.


Is our Anthony getting green around the gills, or did I actually read that he liked Next Food Network Star, which is winding down the competition just as Top Chef is hitting its stride. His assessment of Amy is similar to mine, though once again he critiques the show with phrases and language that are way more masterful.

"But, Goddamn if I'm not liking this fucking show. I find Tuschman's comments refreshingly honest, acknowledging the gruesome reality of network realpolitik over cooking ability with unflinching candor--yet erring on the side of mercy for the devastated JAG. Which, by the way, paints the judges into a real corner..."

As for Top Chef, our world-roaming chef with the highly developed palate can snark with the best of them:

'"Joey comes off like a walking laundry list of "Things Chefs Don't Want In An Employee." Whiner. Crybaby. Blames Others. Persecution Complex. Confrontational. What Bill Buford, in his excellent book, "Heat" came to recognize as a "dickhead"'


And about Howie: "He's a tough, obstinate little bastard. He takes his beatings like a man, without passing the buck or making excuses, but seems not to play well with others."

Wow, Anthony, I only called these two chefs numnuts and the Dick Twins. But then Bourdain falters. He is hung up on Hung and predicts this roadrunner chef will be the eventual winner. Oh, how I love it when even the great chefs are wrong in their predictions. It makes them so divinely human!

Bourdain Pummels Hell's Kitchen

Oh, my. Ms. Place's lighthearted attempts at putting Hell's Kitchen in its place holds no candle to Anthony Bourdain's scathing review of the show on Ruhlman's blog. Had Anthony been as two-thumbed in the kitchen as me, he could have made his living as a critic. Or better yet, a reality t.v. writer.

Top Chef 3: Miami Protein Vice

Was Top Chef 3 worth the wait and anticipation? You betcha! Bravo wasted no time introducing us to the cheftestants as they came off the plane and entered the land of art deco buildings and water and sunshine, and treating us to revealing bikini shots in the opening credits.

Before we could ooh and ah for too long, our new crew was whisked away to Gianni Versace's former McMansion, where they were introduced to each other. "I'm glad I had Tabatha Coffey do my hair," thought Sandee, "'cause compared to these other Bitches, I look hot!"

Spread before them was a bountiful feast. One hour into their banquet, Tom and Padma arrived and challenged the cheftestants to create an Amuse Bouche with the food they were eating, one that would reflect their personalities. "Quelle horreur!" thought some, "We've been double dipping. Wonder if anyone noticed?"

"Amuse who?" Clay wondered as the camera crew began to lovingly follow him around.

The chefs raced around creating their tiny Amuse Bouches with tiny plastic knives. Mica won with her Tuscan Sushi, and it looked like the women were off to a fabulous start.

Our cheftestants were then carried to their penthouse digs at the Fountainbleau with its fabulous views of the ocean. The following day they were introduced to their new kitchen. But their eagerness turned to astonishment when they saw the tables of protein spread before them. The exotic food seemed inspired by Chaucer. The only items that were missing were neet's tongue, drakes feet, flesshly foweles, the gleyre of an ey, a hynde joint, pigges heed, quayles, sqwirelles, swans, and a haunch of venysoun.

Tre smirked as he viewed the boar, monkfish, eel, rattlesnake and ostrich meat. "Cooking bat's knees would have been hard," he thought confidently, "but this shit is easy."

The cheftestants picked out a knife with a number, and were asked to choose their proteins in number order.

Hung, wearing a button that said Certified Professional Asshole, laughed inwardly with glee. "Ha! I don't care what protein I get. I'm a CPA and I know what I'm doing. I don't give a f-ck about anything but winning."

Hearing they would have two hours to prepare their meals, Howie was ecstatic. He knew he would have more than enough time to prepare his frogs legs and sea urchins. "Lemme see," he thought, "Maybe I'll go surfing and then get a massage before I start cookin'."

Meanwhile, Clay was having a melt down. "Do people really eat this stuff?" he worried, as the camera lovingly lingered on each and every one of his boyish features. "What the hell is monk fish liver? I could have performed miracles with possum and catfish, or even some 'gator. Too bad that was gone by the time I got to choose."

The women huddled round in a group. "Look," said Sara, "All we need to do is survive. Those men lack the balls we have."

"I know that the tall dude isn't competing with a full set," said other Sarah.

"Are we cooking genitals?" asked another female chef perplexed.

The chefs then began to rush around making their surf and turf dishes with eel, abalone, spider crab, and snips and snails and puppy dog tails. Just before the two hours were up, Howie rushed in. "Dayum!" he thought, as he threw his sea urchin/frog lollipop meal together, "I might have cut it too close." When the time was up, he was left holding his froggies unplated.

The scene switched to the judges table, where Tom, looking at the assortment of newt's eyes and black chicken claws, said politely to Gail. "You taste first."

"No, you first," Gail said sweetly to Anthony Bourdain, guest judge.

"No, ladies first," Anthony told Padma.

"Oh, please, you first, Anthony, you are the guest judge."

"Who should be first?" the judges appealed to the camera crew.But the crew was paying no attention to the judges, as they were still lovingly aiming their cameras at Clay.


"Tell you what," Tom said. "Let's all dig in at the same time. Anyone know where we put the Maalox?"

The judges choose Tre and Hung as their top two choices. "So, what did you think of each other's dishes? Did you taste them?"

"Yes, " said Tre. "I loved Hung's dish. It was well hung. I mean done." "Loved yours too," Hung said sweetly. "Loved yours more," said Tre. "Loved yours better, A-Hole," Hung retorted.

Tom held up his hand. "Stop this love fest already. Hung, you're too beige, I mean your food is too beige. Tre, you managed to make ostrich look like flank steak and taste like pepperoni pizza. That was amazing. You win. Plus you get a shitload of Anthony's books and an opportunity to treat him to dinner the next time you're both in Paraguay."

Four guys are trotted out next. The women, realizing they were safe, raced for the hot tub. "Last one in has to clean the kitchen!"

Standing in front of the judges were Howie, Brian, Dale, and Clay.

Anthony Bourdain raised an eyebrow. "Howie, what is your major malfunction? What kind of chef goes surfing instead of completing his meal? "

"The kind of chef, Anthony, or can I call you Tony, that sasses back and can quote your book verbatim. The kind who, with one hand tied behind his back, can finish half a meal in half the time. The kind that ... "

"You've got balls, you sonofabitch, and I admire that. However, I want my food now, I want it hot, and I want it when I want it. I want it fast and I want it right. I want it high and I want it low. I want what I want when I think I might want it. However, I like your chutzpah, so you can stay."

"Brian, Dale, your food sucked," Anthony continued, "but the camera crew chose to focus their attentions on Clay, so the viewers think they know him already. He's gotta go. Bye, Clay."

"But I represent the South! And I finished my dish! You should be kicking Howie out! Waahh!"

"You came to kick ass, Clay," Bourdain agreed, "But I like Howie a lot more, so we're kicking out your ass instead."

Top Chef 3, And the Winner Is...

Tre! He's a good chef, a proud guy, and he's got a very generous attitude towards his closest competitor, Hung. Let's just say this is the first time I have no desire to try the winner's dish.

That ostrich fillet looked gamy to me.

So long, Clay. I knew you were leaving because the camera kept following you around. You had no idea what an Amuse Bouche looked like, and you managed to turn your Wild Boar chops into prison chops, as Anthony Bourdain so wryly stated.

You did a good job toughing it out, Howie. And you were lucky that Clay was so bad. I have a feeling you're going to be fun to watch.

Anthony Bourdain's World

This podcast is one year old, but it features Anthony in his glory as he talks about his book, Nasty Bits. Considering the number of cooking shows in prime time this spring (3!), Anthony's experiences are worth repeating. Click here for an introduction to Bourdain's world.

His answer to the question, "How do you stay so slim?" is priceless -
"Cigarettes, neurotic personality, fidgeting. An unhealthy lifestyle."

Anthony also reveals that he loves a good pastrami sandwich and great sushi.
